Description

“Pahad ko kalo chiya” simply means black tea from the foothills of the Himalayas. The foothills are known as ‘Pahad’ and the mountains, Himal/Himalayas. In this series, we aim to recognize farmers’ choices in production. We focus on what they want to grow and sell, rather than what they are directed to produce. This approach allows them the freedom to explore their ideas and creativity.

Largely known as Second Flush this picking begins in early Summer (June) and ends during first week to second week of July, depending upon weather condition and unpredictable monsoon season. Almost all good cultivars are mixed during the picking, which leads to a complex character of the finished product. During this season the tea bushes lush in a high density. High-grown tea bushes from altitudes that vary from 1200-1800 meters are picked to produce these teas.

Warm and humid weather conditions, the abundance of oxygen and tranquil air of the Himalayas contribute to the character of these teas. Green shoots are withered for a period of 8 to 10 hours with high volume conditioned air limiting the leaves to dry only to the extent of having enough moisture. The leaves are then rolled for a precise period for deliberate abrasion and shaped according to the type of green shoot. They are dried continuously in high temperatures not exceeding 125˚ Centigrade. These black teas are re-fired for longer shelf-life.

This particular flavor develops partly due to sap-sucking insects, such as jassids and thrips, which damage the young tea leaves. In response, the tea plant produces more terpene as an insect repellent, resulting in a higher concentration of terpene that creates the distinctive flavor. These type of teas are popular as Muscatel teas.
